Discard the soaking water entirely—this flushes out the released complex starches that cause gas. Give the plumped chickpeas a final, quick rinse under clean water.

3.Pressure Cook to Perfection:5-7 Whistles.

Place the chickpeas into a pressure cooker, covering them with fresh water about an inch above the grain line. Add a tiny pinch of sea salt. Secure the lid and cook over medium-high heat for 5 to 7 whistles, or until the core turns buttery-soft when pressed.

4.Simmer with Masala:Final Finish.
